Directly from the world’s largest cattle, from where is drawn the famous Florentine steak, the chianina care is succulent and tasty in all its varieties: cut, tartare, burger or roast beef.
An indigenous pig reared in the semi-wilderness. The meat obtained from the cinta senese pork is of very high quality. You should not leave the area without having tasted a plate of sliced meat.
Coupled with the local salami or at the end of the meal sprinkled with honey, certainly you could not miss the Pecorino. You can taste it in all its shades: fresh, fresh, seasoned, aged in ash or straw, in the leaves of walnuts or in the pits.
The most typical dish of the “Chiari”, ie the lakes of Montepulciano and Chiusi and closely linked to the traditions of the fishermen. The bristle is a nutritious dish, prepared by abrasing the fish fillets on the laurels or reeds of the lake. After cooking, just whisk the fish from the burnt parts and season it with oil, salt and herbs.
Nothing is better than a slice of shredded bread to savor the authentic taste of Extra Virgin Olive Oil. Between the sweet and the bitter, accompanied with the characteristic pinch, this typical oil of the Valdichiana is a true delicacy for the palate.
